Herbed Pistachio Rice Pilaf



1 Tbsp Olive Oil
½ sweet onion, medium diced
1 cup brown basmati rice, rinsed well
½ tsp salt
1 cup Three Trees Pistachio Milk
1 cup filtered water
¼ cup minced parsley (~½ bunch)
½ cup loosely packed chopped mint (~½ bunch)
½ cup shelled pistachios
¼ cup craisins, chopped

Heat olive oil in a large saucepan over medium high heat. Add onion, reduce heat to medium/low and cook onion until lightly browned (~10 min). Add rice and stir until onions are mixed well and rice is fully coated in oil (~15 sec). Add Three Trees milk and water to pan, bring to a boil, then reduce to a simmer and cover. Allow to cook for 40 minutes, then allow to rest, covered, for 10 minutes. Allow rice to cool, then mix in herbs, pistachios, and craisins. Serve (yields ~12-16 servings) and enjoy!
