Coconut Tofu Curry

Creamy and flavorful, this curry is ready to eat in under half an hour thanks to pre-made curry sauce.

Ingredients

3 oz Sukhi’s Coconut Curry Sauce

4 oz Hodo Tofu, Extra Firm

1 cup Three Trees Almond Milk

2 tbsp olive oil

¼ cup diced yellow onion

¼ cup sliced red bell pepper

¼ cup sliced carrots

¼ cup green beans

Garnishes (optional)

Cilantro

Chopped red cabbage

Cashews

Lime wedges or slices

Directions

Heat oil in a pan on medium heat

Add the onion and cook until it starts turning translucent

Add remaining vegetables and sauté for 5-6 minutes. Vegetables should be fork-tender

Add the curry paste and stir until vegetables are coated well

Pour in almond milk and stir frequently for 2-3 minutes until sauce is simmering

Cut the tofu into cubes and add to the curry

Lower heat and let cook 6-7 minutes or until sauce begins to thicken. Stir frequently

Pour into a serving bowl and garnish
