Herbed Pistachio Rice Pilaf

This smoothie is a delicious and healthy way to start your day. It is made with frozen banana, pistachio milk, dino kale, plant-based yogurt, chia seeds, and coconut flakes. The banana and pistachio milk provide a creamy base, while the kale and chia seeds add nutrients and fiber. The coconut flakes add a touch of sweetness and texture.

Ingredients

1 tablespoon Olive Oil

½ sweet onion, medium diced

1 cup brown basmati rice, rinsed well½ teaspoon salt

1 cup Three Trees Pistachio Milk

1 cup filtered water

¼ cup minced parsley (~½ bunch)

½ cup loosely packed chopped mint (~½ bunch)

½ cup shelled pistachios

¼ cup dried cranberries chopped

Directions

Heat olive oil in a large saucepan over medium high heat. Add onion, reduce heat to medium/low and cook onion until lightly browned (~10 min). Add rice and stir until onions are mixed well and rice is fully coated in oil (~15 sec). Add Three Trees milk and water to pan, bring to a boil, then reduce to a simmer and cover.
