Chocolate Pumpkin Avocado Protein Pudding

This luscious, better-for-you pudding tastes like dessert yet is balanced enough to enjoy any time of day! With creamy avocado, rich cacao, and cozy pumpkin spice, it’s a nourishing twist on chocolate pudding that satisfies your sweet tooth while fueling your body.

    • 1 cup almond milk

    • ¼ cup pumpkin puree

    • 1 tbsp ground flax seeds

    • 1 serving vanilla plant protein

    • 5 tsp cacao powder

    • 1 tsp gelatinized maca powder, optional

    • ½ tsp pumpkin spice, plus more to taste

    • Sea salt, a pinch

    • 1–2 pitted Medjool dates, preference

    • ½ ripe avocado, fresh or frozen

    • Homemade coconut whipped cream, for serving

    1. Blend the Liquids & Powders. First, add the non-dairy milk, pumpkin puree, and the dry ingredients to a high-speed blender. Blend these ingredients until smooth.

    2. Blend the Medjool Date(s). Add the soft, pitted Medjool date(s) and blend until there are no date pieces in sight.

    3. Blend the Avocado. Lastly, add the (fresh or frozen) ripe avocado. Blend until the pudding is creamy but still thick. If it's too thick for your preference, add a splash of liquid to achieve your desired consistency.

    4. Serve. Transfer your pumpkin pudding to a chilled glass. Top with a dollop of homemade coconut whipped cream (or your favorite toppings). Enjoy!
